Nestled in the heart of Sumatra's Aceh province, a hidden gem of coffee cultivation thrives in the Sintep and Kenawat sub-districts. Here, bordering a tranquil inland lake, coffee trees stretch their roots into rich, black humus soil, drawing nourishment from elevations of 1500 to 1600 meters above sea level. The misty, humid air that cloaks these highlands whispers of Indonesia's tropical essence.
But it's not just the terroir that makes this coffee special - it's the artful "Wine Process" that transforms these beans into something extraordinary. Imagine ripe cherries, freshly plucked and lovingly washed, sealed away from the world in airtight chambers. For 25 days, they undergo a secret metamorphosis, an anaerobic dance that infuses them with intoxicating, wine-like notes.
Once the cherries emerge from their cocoon of fermentation, they're rinsed and laid out to bask in the sun. Slowly, they relinquish their moisture until they reach the perfect 12-13% humidity - a delicate balance that locks in their newly acquired complexity. Finally, these transformed beans are carefully milled, sorted, and readied for their journey across the globe, carrying with them the unique story of their Sumatran origins and innovative processing.
