Givette Pérez Orea is part of a growing movement in Veracruz pushing Mexican coffee into the global spotlight — not through novelty, but through precision. At her Finca Fátima station, she favors clarity and structure over theatrics, designing processes that preserve sweetness rather than distort it.

This washed Marsellesa begins with strictly ripe cherry selection, followed by a controlled traditional fermentation and a meticulous water washing to maintain purity. Drying takes place inside covered solar dryers — a slow, temperature-stable environment that protects volatile aromatics while deepening sugar development.

The result is a cup that feels decadent yet composed — root beer and Tootsie Roll richness, lifted by pomegranate acidity and finishing with the weight of dessert wine. Comforting but not obvious. Dense without heaviness. A coffee built on restraint, proving indulgence can be engineered with discipline.
